Macaroni Salad Recipe

Ingredients:
  • 2 cups elbow macaroni (uncooked)

  • 1 cup mayonnaise

  • 2 teaspoons yellow mustard

  • 1 tablespoon apple cider vinegar (or white vinegar)

  • 1 teaspoon sugar

  • Salt and pepper to taste

  • 1/2 cup diced red bell pepper

  • 1/2 cup diced celery

  • 1/4 cup finely chopped red onion

  • 1/4 cup chopped dill pickles or relish (optional)

  • 2 hard-boiled eggs, chopped (optional)

  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Macaroni:
    Boil pasta in salted water according to package directions. Drain and rinse under cold water until cool.

  2. Make the Dressing:
    In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.

  3. Combine Ingredients:
    Add the cooled macaroni to the bowl along with bell pepper, celery, onion, pickles, and eggs (if using). Mix until everything is coated well.

  4. Chill:
    Cover and refrigerate for at least 1 hour to let the flavors meld. Stir before serving and adjust seasoning if needed.

  5. Garnish (optional):
    Sprinkle with chopped parsley or paprika before serving.

Tips: Add a little more mayo before serving if the salad has dried out. You can substitute Greek yogurt or sour cream for some of the mayo for a lighter version. Customize with ingredients like peas, ham, cheese, or olives if you like.
