Ingredients: Soft Caramels – 12 oz (store-bought or homemade) Pecan Halves – 6 oz Semi-Sweet Chocolate – 8 oz (chips or bars) Instructions: Toast the Pecans: Preheat oven to 350°F (175°C). Spread pecan halves on a baking sheet and toast for 8-10 minutes until fragrant. Let cool. Melt the Caramels: Microwave in 30-second intervals, stirring until smooth, or melt over low heat in a saucepan. Assemble the Turtles: Line a baking sheet with parchment paper. Arrange pecans in clusters of 3-4. Spoon 1 tbsp melted caramel over each cluster. Let set for 10-15 minutes.  Melt the Chocolate: Microwave in 30-second intervals, stirring until smooth, or melt using a double boiler. Coat with Chocolate: Spoon 1 tbsp melted chocolate over each caramel-pecan cluster and spread evenly. Let set at room temperature for 1 hour or refrigerate for 20-30 minutes. Serve & Store: Enjoy immediately or store in an airtight container for up to 1 week at room temperature, or 2 weeks in the refrigerator
