Crispy Cheesy Mashed Potato Puffs Turn leftover mashed potatoes into crispy, cheesy bites—perfect as an appetizer, snack, or light lunch! Ingredients Mashed potatoes – 3 cups Shredded cheese – 1 cup All-purpose flour – 1/4 cup Parmesan cheese – 2 tbsp Chopped chives – 2 tbsp Sour cream – 1/3 cup Salt – To taste Eggs – 2, beaten Instructions Mix: Combine mashed potatoes, cheeses, flour, chives, sour cream, and salt in a bowl. Add Eggs: Stir in beaten eggs until well combined. Shape: Form into small balls or patties. Cook: Bake: Preheat oven to 400°F (200°C). Place on a parchment-lined sheet and bake for 15-20 minutes until golden. Fry: Heat oil in a skillet and fry in batches until crispy. Drain on paper towels. Serve: Enjoy warm with your favorite dipping sauce
